While our tamale pies can be eaten by themselves, you can also serve them with a side of beans, rice or vegetables for a complete meal. Salads offer a lighter accompaniement to the tamale pies which are hearty and satisfying. With their spicy flavorfulness, The Whole Tortilla salsas are ideal ingredients to use in your favorite foods.

Easy-Peasy Black Beans
16 oz. can black beans including liquid
1 small onion, chopped
1 clove garlic, chopped
1 tbl. fresh cilantro, chopped
¼ tsp. cayenne pepper
Salt to taste

In a medium saucepan, combine beans, onion and garlic. Bring contents to a boil then reduce heat to medium-low.

Add cilantro and cayenne. Season with salt to taste. Simmer for 5 minutes. Serve with your favorite The Whole Tortilla tamale pie and enjoy!


Sweet And Spicy Black Beans
½ tbl. olive oil
1 small onion, finely chopped
1 garlic clove, minced
½ jalapeno pepper, seeded and finely chopped
16 oz. can black beans, rinsed and drained
8 oz. can diced tomatoes w/ basil, garlic & oregano (or plain)
1 tsp. honey
1 tsp. packed light brown sugar
¼ tsp. ground ginger
¼ tsp. salt

Heat the olive oil in a frying pan over medium high heat. Add onion and stir. Cook the onion for 20 to 25 minutes or until golden brown.

While the onion is cooking, drain and rinse the black beans, place into a large pot. Add the diced tomatoes, honey, brown sugar, ginger and salt.

Into the sautéed onion, add jalapeno and garlic. Mix well and continue cooking 5 minutes longer, stirring frequently. Add browned onion, garlic and jalapeno mixture to the pot of beans and stir. Heat beans over medium heat until hot.

Sassy Scrambled Eggs
4 large eggs
Salt and black pepper to taste
1-2 tbl. butter
¼ cup onion, minced
¼ cup red or green bell pepper, diced (optional)
¼ to ½ cup The Whole Tortilla tomato salsa

In a medium bowl, beat eggs until completely combined. Add seasoning. Over medium heat, melt butter in skillet. Pour in beaten eggs. Add onion and optional bell peppers.

Stir, turning eggs more frequently for a “fluffier” scramble. Cook approximately 3-4 minutes for soft scramble, longer if you want the eggs cooked more thoroughly. Remove from heat and divide cooked eggs into 2-4 plates. Top with salsa and serve.


Mexican Night Salad
Dressing Ingredients
2 tbl. low fat mayonnaise
2 tbl. low fat sour cream or regular yogurt
1 tbl. lime juice
½ tsp. sugar or honey to taste
Pinch of ground cinnamon
Sea salt to taste
Ground black pepper to taste
¼ cup chopped pecans

Salad Ingredients
1 head romaine lettuce, chopped
1 avocado, chopped
1 orange, sectioned and chopped (optional)
¼ small red onion, thinly sliced

In a food processor or by hand, combine all dressing ingredients except pecans and blend well. Add pecans and blend so that some of the pecans are ground fairly fine, some pieces are still recognizable.

In an oversized bowl, add salad ingredients. Add dressing into salad, tossing as you drizzle. Serve with The Whole Tortilla tamale pie of your choice. You can store leftover dressing in the refrigerator; use within a week's time.
